Bacon Pea Salad

3/4 cup mayonnaise
1 tablespoon bacon grease
1 tablespoon honey
1 tablespoon white sugar (granulated)
1 pinch Salt & pepper to taste

4 slices bacon — minced (I use packaged crumbled bacon)
20 ounces frozen green peas, thawed and well drained
2 stalks chopped celery 
1/2 cup cubed cheddar cheese optional
1/3 cup chopped onion


I use the packaged bacon. If using packaged bacon hopefully you have saved bacon grease in your refrigerator. Or cook bacon drain and reserve 1 tablespoon bacon grease

Whisk mayo, reserved bacon grease, honey, sugar, salt and black pepper together in bowl until dressing is smooth.

Mix bacon, peas, celery, cheddar cheese, and onion together in a bowl. Drizzle dressing over salad and toss to coat.

Refrigerate until chilled, about 30 minutes.
