Herbed Tea Cake

1 cup butter (2 sticks)
2 cups sugar
1 large egg
1 cup milk
3 cups flour
2 teaspoons baking powder
1 scant teaspoon salt
1-2 Tablespoons any sweet herb*

*Suggestions: Rose Scented Geranium (Pelargonium graveolens), Lemon Verbena, Lemon Thyme, Lemon Balm, Calendula


Preheat oven to 350 degrees. Lightly grease and flour a bundt pan or two 9×5″ loaf pans.

Cream together the butter and sugar in a large bowl. Add the egg and milk and beat well.

Combine flour, baking powder, and salt together. Add flour mixture to creamed mixture and mix well.

Spoon the mixture into prepared pan.  Bake for 55-60 minutes or until knife inserted comes out clean.

Cool and serve at room temperature. May freeze up to 3 months.
