Step 1 Infuse your dried sweet woodruff (leaves, flowers and stems) in the bottle of white wine. Recork the bottle and refrigerate for an hour or so. Some recipes say the infusion should last overnight but an hour is usually sufficient. You can use fresh sweet woodruff, but the flavor is more intense when the leaves are dried.
Step 2 Strain the sweet woodruff from the wine.
Step 3 Pour the infused wine into a glass pitcher or a punch bowl. Slowly add the chilled sparkling wine.
Step 4 Add the strawberries and a pinch of sweet woodruff flowers. Gently stir. If you are using a punch bowl and have made an ice ring add it now.
Note: Make your ice ring a few days ahead of serving in order for it to freeze. Consider adding any edible herbs and flowers to the ice ring.
